INGREDIENTS
200 grams paneer
3 tomatoes
1 green chili
1 inch ginger
8-10 cashews
2-3 tbsp oil
1 tsp cumin seeds
2 dry red chilies
1 pinch asafoetida
1/2 tsp salt or as per taste
1/2 tsp red chili powder
1/4 tsp turmeric powder
1 tsp coriander powder
2 tbsp kolhapuri masala
1 tbsp coriander leaves chopped
.to make kolhapuri masala:
1 inch cinamon stick
7-8 cloves
4 green cardamoms
1 black cardamom
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp fennel seeds
8-10 lack pepper corns
1 tsp white sesame seeds
1/3 cup dried coconut
8-10 dry red chilies
Instruction :-
Step1. to make kolhapuri masala:
Step 2. in a heavy bottomed pan, roast all the listed ingrediants for kolhapuri masala on low flame until you can get aromatic smell coming from the spices
Step 3. once roasted, transfer to a bowl and allow it to cool slightly
Step 4. once the roasted spices cools down blend this to a fine powder
Step 5. kolhapuri masala is ready, keep aside
Step 6. to make paneer kolhapuri:
Step 7. grind the tomatoes, green chilies, ginger and cashews in a mixer jar to make a fine paste
Step 8. cut paneer into squares
Step 9. heat oil in a pan and add cumin seeds
Step 10. when it starts crackling add asafoetida and red chillies
Step 11. next add tomato-cashew paste and saute until raw smell goes
Step 12. add salt, red chili powder, turmeric powder, coriander powder and kolhapuri masala
Step 13. add 2 tbsp water and cook until oil separates from the gravy
Step 14. now add 1/2 cup water and let it simmer for few more minutes
Step 15. add chopped coriander and paneer chunks
Step 16. give a nice stir and then cook for 2-3 minutes
Step 17. transfer paneer kolhapuri in a serving bowl
Step 18. serve this super yummy paneer kolhapuri with rice, chapati, naan or paranthas
