Churma

Churma is a traditional Rajasthani sweet it is served with dal bhatti. It's usually made during festivals and special occasions.

How to prepare?

Ingredients 1 cup wheat flour   ¼ cup rawa (semolina) 1 tbsp besan (bengal gram flour) 4 tbsp ghee Milk or water (to knead dough) ½ cup powdered sugar (as required) ¼ tsp cardamom powder (elachi) 2 tbsp almonds, shredded 1 tbsp pistachios, shredded Ghee for deep frying

Method Combine together wheat flour, rawa (semolina), besan and 3 tbsp ghee and knead it into firm dough using required water or milk. Cover the dough and set aside for 10 minutes. Divide the dough into 7-8 equal portions of it and make round balls from it. Flatten each ball by pressing it between your palm. Heat the ghee in a pan and deep fry the baati's in it over a low flame till golden brown. Drain and allow them to cool. Break them into pieces; Grind coarsely and sieve to get suji rawa like powder. Roast this powder in a pan over a low flame for 4-5 minutes. Add ½ cup sugar, 1-2 tbsp ghee and shredded nuts to the roasted powder. Mix well. Garnish with dry rose petals and more nuts. Note: You can cook the baati's in a gas tandoor.   You can also bake the baati's on a wire rack of preheated electric oven at 180degree Celsius. You can adjust the quantity of ghee and sugar according to your tatse. You can store in an air-tight container.
