Curd Rice - Paryushan Special

How to prepare?


1 cup cooked Rice   ½ to ¾ cup thick curd( yogurt) ¼ cup milk (optional) Salt to taste   For tempering   1 ½ tbsp ghee/oil ¼ tsp mustard seeds(rai) ½ tsp cumin seeds(jeera) 1-2 dry red chilli A pinch of asafoetida(hing) 1 tsp urad dal (split black gram) 5-6 cashews (optional)


In bowl, churn or whisk curd nicely using hand blender. Mix cooked rice to the whisked curd and mix well. Heat the ghee in a small tempering pan. Add mustard seeds, asafoetida and cumin seeds. When they start to splutter, add urad dal and cashews, sauté till it turns golden brown. Add dry red chilli to it. Sauté for 1minute and turn off the heat. Let the tempering cool down to room temperature. Then pour the tempering to curd rice. Mix well. Refrigerate curd rice for an hour. Serve chilled curd rice with pickle. Note: If the curd is fresh then you can skip adding milk.
