Ingredients for Jain Hariyali Paneer Tikka Recipe

Paneer (cottage cheese) cut into 1 inch cubes 250 grams

Fresh coriander leaves roughly chopped ½ cup

Fresh mint leaves roughly chopped ¼ cup

Green chillies chopped 1-2

Dried ginger powder (soonth) 1 teaspoon

Cumin powder 1 teaspoon

Oil 5 tablespoons

Gram flour (besan) roasted 2 tablespoons

Lemon juice 1 teaspoon

Babycorns sliced diagonally 5-6

Red capsicum cut into 1 inch cubes 1

Salt to taste

Chaat masala 1 teaspoon

Method

Step 1.Put coriander leaves, mint leaves, green chillies, ginger powder, cumin powder and two tablespoons oil in a mixer jar and grind coarsely. Transfer into a large bowl and add gram flour, lemon juice and one tablespoon oil and mix well.

Step 2.Add paneer, baby corns and red capsicum and gently mix till they are well coated with the ground paste.Set aside to marinate for twenty to thirty minutes.

Step 3.String paneer, baby corn and red capsicum, one after other on skewers, keeping little space in between. Keep them on a plate.

Step 4,Heat two tablespoons oil on a non-stick grill pan, place the satay sticks on it and cook, rotating the sticks occasionally, till the cottage cheese is golden brown all around.

Step 5.Place the satay sticks on a serving plate, sprinkle chaat masala over them and serve hot.
