Italian Papadi Pizza Chaat is a desi-Italian fusion delight. Chaat papadis are topped with cheese, red pasta, olives and Jalapenos and baked.
Ingredients
16-20 pani puri pooris
1 1/2 cup tomato puree fresh
2 tbsp tomato ketchup
1 tsp red chilli flakes
1 tsp dried oregano
10-12 basil leaves (fresh)
salt to taste
1/2 tsp sugar
2 tsp olive oil
1 tbsp babycorn (finely chopped)
1 tbsp zucchini (finely chopped)
1 tbsp red ,yellow,green each (finely chopped )
processed cheese (for sprinkling)
Instructions
Step 1 To make sauce, heat tomato puree in a deep non-stick pan and cook for 4-5 minutes. Add ketchup and mix well.
Step 2 Add ½ teaspoon chilli flakes, ½ teaspoon oregano, 5-6 basil leaves, salt, sugar and 1 teaspoon olive oil and mix well. Remove from heat and cool.
Step 3 Heat remaining olive oil in a non-stick pan. Add babycorn, zucchini, all the capsicums, and sauté for 1 minute.
Step 4 Add salt, remaining oregano, remaining basil leaves and remaining chilli flakes and mix well. Remove from heat and cool.
Step 5 Fill each puri with a portion of the prepared vegetable mixture and top with some prepared sauce. Sprinkle cheese on each and top with some more sauce. Serve immediately.
