Italian sandwich has contrasting textures and absolutely complementary flavours, making it stand out.
Ingredients
2 mixed herb bread loaf
1 cup tomato puree
2 tbsp tomato ketchup
3-4 basil leaves
1 tbsp olive oil
1 tsp red chilli flakes
1 tsp dried oregano
salt to taste
2 tsp fresh parsley (chopped)
3-4 babycorn (blanched and finely chopped)
2 tbsp green and yellow zucchini (finely chopped)
2-3 tbsp mixed capsicum (finely chopped)
1 tbsp processed cheese as required (grated)
butter as required
3-4 green chillies (pitted and sliced)
Instructions
Step 1 To prepare stuffing, heat a non-stick pan. Add tomato puree, mix and cook till the moisture evaporates.
Step 2 Add tomato ketchup, torn basil leaves and olive oil, mix and cook for 1 minute. Add chilli flakes, dried oregano and salt, mix and cook for 1-2 minutes.
Step 3 Add parsley, reduce heat and mix. Add babycorn, mixed zucchini and mixed capsicum, mix and cook for 1 minute.
Step 4 Add 1 tablespoon cheese, mix and cook for 1-2 minutes. Transfer in a bowl.
Step 5 Halve the bread loafs horizontally and slit each halve vertically.
Step 6 Heat a non-stick tawa. Apply some butter on the slit side of each bread halve, place on hot tawa and toast till golden brown from downside.
Step 7 Add green olives to the stuffing and mix well.
Step 8 Preheat an electric griller. Spread some stuffing and cheese on the toasted base loaf and cover with the toasted side of the top loaf.
Step 9 Apply some butter on top of the prepared sandwiches, place in preheated griller, cover and grill it golden brown from both sides.
