How to prepare?
Ingredients
¼ cup rice
1 litre milk
¼ tsp cardamom powder
3-4 strands saffron
3-4 tbsp sugar(according to taste)
2 tbsp chopped cashew nut (optional)
2 tbsp blanched almonds (optional)
1 tbsp raisins(optional)
Method Wash and soak rice in water for about 15 minutes. Take milk in heavy bottom pan and let it boil. Once the milk starts boiling add the drained rice in it and cook. Add sugar, cook till the rice is soft and tender for about 15-20 minutes while stirring constantly, until the kheer thickens. Add cardamom powder, nuts and saffron strands. Mix well and cook for 5 minutes. Once you get the desired consistency turn off the flame. Serve warm or cold garnished with more nuts and saffron strands.
Note: Amount of sugar can be adjusted according to taste. Once is cooled the kheer is thickened. You can add condensed milk and decrease the amount of sugar. You can add ¼ cup mawa. For instant kheer you can use left over rice . You can add rose water for flavour garnishing with dry rose petals.
