A fresh salsa served with rotis dressed up as nachos - desi recipe with a videsi touch.
Ingredients
4 medium rotis
Oil for deep-frying
1 teaspoon chaat masala
¾ cup grated processed cheese
Salsa
1 medium tomato, seeded and finely chopped
1 small green capsicum, finely chopped
1 green chilli, crushed
¼ cup tomato ketchup
1 tablespoon red chilli sauce
1 tablespoon chopped fresh coriander leaves
¼ teaspoon red chilli powder
Method
1. Heat sufficient oil in a kadai.
2. To make salsa, mix together tomato, capsicum, green chillies, tomato ketchup and chilli sauce in a bowl. Add coriander leaves, chilli powder and mix well. Refrigerate for 10 minutes. 3. Cut rotis into triangles and deep-fry in hot oil till golden brown and crisp. Drain on absorbent paper.
4. Preheat oven at 180° C.
5. Put some of the fried roti nachos in an ovenproof dish. Sprinkle chaat masala and top with some of the prepared salsa and half the cheese.
6. Put the remaining roti nachos and top with remaining salsa and cheese. Put the dish in the preheated oven and bake till the cheese melts.
7. Serve immediately.
